Last Alliance of Elves and Men:

Toward the end of the Second Age Sauron returned to Mordor after bringing about the fall of Númenor. He soon began to attack Gondor, capturing Minas Ithil (which is now known as Minas Morgul).

Gil-galad, High King of the Elves, and Elendil, King of Gondor, formed an alliance of Elves and Men. They marched against Mordor, defeating Sauron's minions on the Plain of Dagorlad outside the Black Gate. They then marched into Mordor and laid siege to Barad-dûr itself. Both Gil-galad and Elendil were killed during the siege. After eleven years, Sauron was defeated when Isildur, son of Elendil, cut the One Ring from Sauron's hand. This ended the Second Age of Middle Earth.

Sauron was merely defeated and not destroyed because his fate was bound to the Ring and Isildur chose to keep the Ring, rather than throw it into the Cracks of Mt. Doom as Elrond pleaded.

In the films: The final battle of the Second Age was depicted in the Prologue of The Fellowship of the Ring with Elendil's death being depicted as happening just prior to Sauron's defeat.
